  • 2 1/4 cups very ripe mashed bananas

Instructions

  1. Preheat your oven to 300°F and prepare two 9×5-inch loaf pans by buttering them and lining with parchment paper.
  2. In a mixing bowl, whisk together flour, salt, baking powder, and baking soda. If using nuts, fold them in at this stage.
  3. In another bowl, cream together sugar and butter until fluffy. Beat in eggs one at a time, then mix in mashed bananas.
  4. Gradually add the dry mixture to the wet ingredients alternately with buttermilk. Mix just until combined.
  5. Pour the batter evenly into prepared pans and bake for about 60 minutes or until golden brown and a toothpick comes out clean.
