  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 1/4 cups mashed bananas (about 3-4 bananas)
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt or sour cream
  • 3/4 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, sift together flour, baking soda, and salt; set aside.
  3. In a stand mixer, beat the softened butter and brown sugar until fluffy. Add maple syrup and mix well.
  4. Incorporate eggs one at a time, then add mashed bananas and vanilla extract until fully blended.
  5. Gradually mix in half of the dry ingredients followed by yogurt, then add the remaining dry ingredients until just combined. Fold in most of the chopped nuts.
