  • 4 large russet potatoes
  • 1 lb. ground beef (85% lean)
  • ¾ cup sour cream
  • 2 cups half-and-half
  • 4 cups chicken broth
  • 1 yellow onion
  • 3 cloves garlic
  • 1½ cups mixed frozen vegetables
  • 2 cups shredded cheddar cheese

Instructions

  1. Peel and chop potatoes. Boil in salted water until fork-tender, then mash with sour cream and one tablespoon of butter.
  2. Cook ground beef in a large pot over medium-high heat until fully browned; drain excess grease.
  3. In the same pot, melt two tablespoons of butter. Sauté diced onion until softened, then add minced garlic.
  4. Whisk in flour for one minute, then gradually add chicken broth while stirring constantly.
  5. Stir in Worcestershire sauce, Italian seasoning, mustard powder, and sage; bring to a boil before reducing heat to simmer.
  6. Mix in the mashed potatoes until well combined; blend if desired for creaminess.
  7. Add cooked beef and frozen vegetables; heat through for about five minutes.
  8. Remove from heat and stir in shredded cheese until melted.
