  • 1 tablespoon water
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 3 tablespoons butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries

Instructions

  1. To make the strawberry sauce: In a saucepan over medium heat, combine hulled and sliced strawberries with sugar, lemon juice, and water. Cook for 5-7 minutes until softened. Stir in cornstarch mixed with water; cook until thickened.
  2. For the pancakes: In one bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix buttermilk, egg, melted butter, and vanilla. Combine wet and dry ingredients; allow to rest for 10 minutes.
  3. Fold in diced strawberries before cooking.
  4. Preheat a non-stick skillet over medium heat. Pour 1/4 cup batter onto skillet; cook until bubbles form, then flip and cook until golden brown.
  5. Serve warm pancakes drizzled with strawberry sauce.
