  • 1 Tbsp Olive Oil
  • 1 Celery Stalk, Finely Chopped
  • 1 Small Carrot, Peeled & Finely Chopped
  • 1 Medium Onion, Finely Chopped
  • 2 Garlic Cloves, Crushed
  • 400 G Chickpeas, Rinsed And Drained
  • 400 G Chopped Tomatoes
  • ½ Tsp Ground Cumin
  • ½ Tsp Ground Cinnamon
  • ½ Tsp Ground Paprika
  • ½ Tsp Cayenne Pepper
  • 850 Ml Vegetable Stock

Instructions

  1. Prepare all ingredients by chopping vegetables and crushing garlic.
  2. Heat olive oil in a soup maker or large saucepan. Sauté onion, garlic, celery, and carrot for about 5 minutes until softened.
  3. Combine sautéed vegetables with chickpeas, chopped tomatoes, spices, and vegetable stock in your soup maker or saucepan.
  4. Blend partially or fully according to your preference for texture. Cook according to your appliance instructions until ready.
  5. Serve hot garnished with chopped mint leaves if desired.
