  • 2 medium heads cauliflower (about 650g)
  • 1 ½ cups gluten-free flour blend
  • 2 tbsp cornstarch
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tsp garlic powder
  • ¼ tsp black pepper
  • 1 ¾ cups seltzer water
  • ½ cup maple syrup
  • 6 tbsp soy sauce
  • ¼ cup light brown sugar
  • 3 tbsp minced garlic
  • 2 tbsp minced fresh ginger
  • 2 tbsp apple cider vinegar
  • 1 tbsp toasted sesame oil

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Cut cauliflower into bite-sized florets and rinse thoroughly; pat dry.
  3. In a bowl, whisk together gluten-free flour blend, cornstarch, baking powder, garlic powder, black pepper, and salt.
  4. In another bowl, mix seltzer water with apple cider vinegar; gradually combine with dry ingredients until smooth.
  5. Coat cauliflower florets in batter and arrange in the air fryer basket in a single layer.
  6. Air fry for 15-20 minutes, shaking the basket every 5-7 minutes.
  7. Meanwhile, prepare the sauce by sautéing ginger and garlic in sesame oil; then add remaining sauce ingredients and simmer for a few minutes.
  8. Toss the crispy cauliflower with the warm sauce and serve immediately.
