  • 1 1/2 cups sweetened shredded coconut
  • 1 1/2 cups sliced almonds
  • 8 cups crispy rice cereal
  • 8 cups mini vegan marshmallows
  • 4 tablespoons butter
  • 1 teaspoon pure coconut extract
  • 8 oz semi-sweet or bittersweet chocolate

Instructions

  1. Preheat your oven to 375°F (190°C) and toast the shredded coconut and sliced almonds on a baking sheet for about 6-10 minutes until lightly golden.
  2. Lightly grease a 9"x13" cake pan.
  3. In a mixing bowl, combine crispy rice cereal with most of the toasted coconut-almond mixture (reserve some for topping).
  4. In a microwave-safe bowl, melt vegan marshmallows with butter for 2-3 minutes until puffy; stir in coconut extract.
  5. Pour melted marshmallow mixture over the cereal mixture and mix well.
  6. Press into the greased cake pan and let cool slightly before topping with melted chocolate and reserved coconut-almond mixture.
  7. Allow to cool completely before cutting into squares.
