  • 6 celery stalks with leaves, sliced ¼-inch thick, leaves roughly chopped
  • 1 cup walnuts, toasted and roughly chopped
  • ½ cup dried cranberries
  • ¼ cup fresh parsley, finely chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Wash and core the apples, then cut them into ½-inch pieces.
  2. Slice celery stalks into ¼-inch thick pieces and roughly chop the leaves.
  3. In a dry skillet over medium-low heat, toast walnuts for about 5–7 minutes until fragrant, then chop.
  4. In a small bowl, whisk together olive oil, lemon juice, honey, sea salt, and black pepper until emulsified.
  5. In a large mixing bowl, combine apples, celery stalks, walnuts, dried cranberries, and parsley. Drizzle with dressing and toss gently to coat.
  6. Add chopped celery leaves to the mixture and let the salad rest for 10–15 minutes before serving.
