  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup cold butter, cut into small cubes
  • 4 cups peeled, chopped fresh apples
  • 2 teaspoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (for apple filling)
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup powdered sugar
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, oats, brown sugar, granulated sugar, salt, and cinnamon. Cut in cold butter until crumbly.
  3. Reserve 1½ cups of the mixture for topping; press the remainder into the baking pan and bake for 10–12 minutes until lightly golden.
  4. While crust bakes, toss chopped apples with cornstarch, lemon juice, vanilla extract, cinnamon, and nutmeg in another bowl.
  5. Spread the apple filling over the baked crust and sprinkle reserved crumb mixture on top.
  6. Bake again for about 30–35 minutes until bubbly and golden brown.
  7. Cool completely before cutting into bars; drizzle with glaze if desired.
