  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated white sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla
  • 2 medium apples (peeled, cored, and cut into 1/2 inch pieces)
  • 1/3 cup brown sugar
  • 1 tablespoon cinnamon

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare a 9 x 4 inch baking tin with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
  3. In a large mixing bowl, cream together room temperature butter and granulated sugar until light and fluffy. Add eggs one at a time followed by vanilla.
  4. Gradually mix in half of the dry ingredients followed by all the buttermilk. Fold in the remaining flour mixture until just combined.
  5. Toss diced apples with brown sugar and cinnamon in a separate bowl until coated.
  6. Layer half of the batter into the prepared tin, sprinkle half of the apple mixture on top, swirl gently with a knife, then add the remaining batter and apples.
  7. Bake for 55 – 65 minutes or until a toothpick comes out clean; cover with aluminum foil if browning too quickly.
  8. Cool in the pan for 10 minutes before transferring to a cooling rack.
