  • 2 cups all-purpose flour
  • 3/4 cup brown sugar
  • 2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 2 tbsp powdered sugar (for glaze)
  • 1-2 tbsp milk (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a muffin tin.
  2. In a bowl, toss diced apples with cinnamon and a sprinkle of sugar.
  3. In another bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt.
  4. In a separate bowl, mix eggs, milk, and melted butter until smooth.
  5. Combine wet ingredients with dry ingredients until just mixed. Fold in spiced apples.
  6. Fill muffin cups about 3/4 full with batter.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  8. For the glaze, whisk powdered sugar with milk and drizzle over warm muffins.
