  • 1 cup (200g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups (180g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 medium apple, peeled and finely diced
  • 2 tbsp (25g) granulated sugar for topping
  • 1 tsp ground cinnamon for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, cream softened butter with granulated and brown sugar until fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add dry mixture to wet ingredients; mix until just combined.
  6. Gently fold in diced apple.
  7. Spread batter into prepared pan and sprinkle cinnamon-sugar topping over it.
  8. Bake for 25–30 minutes until edges are golden brown; check doneness with a toothpick.
  9. Cool completely before cutting into squares.
