  • 2 jars artichoke hearts
  • 3-4 ounces arugula
  • 1 cup cherry tomatoes
  • ½ red onion, thinly sliced
  • ½ cup black olives
  • ¼ cup extra virgin olive oil
  • 2 tablespoons vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Arrange arugula on a large serving platter.
  2. Drain and scatter artichoke hearts over the arugula.
  3. Top with halved cherry tomatoes, sliced red onion, and black olives.
  4. In a small jar, combine olive oil, vinegar, lemon juice, maple syrup, oregano, basil, garlic powder, salt, and pepper; shake well.
