These crisp, tangy pickled cucumbers are quick to prepare and packed with bright Asian-inspired flavors. Ginger, rice vinegar, and soy create a refreshing balance of sweet, salty, and spicy notes — perfect as a side dish, topping, or snack.

For the Pickles:
2 English cucumbers, thinly sliced
1 shallot, thinly sliced
1 cup seasoned rice vinegar
2 tbsp sugar
1 tbsp grated ginger
1 tsp sea salt
1 tsp dried red chile flakes
2 tbsp soy sauce

Instructions

  • Wash and thinly slice the cucumbers and shallot. Place them in a large bowl or jar.
  • In a separate bowl, whisk together rice vinegar, sugar, grated ginger, salt, chile flakes, and soy sauce until the sugar dissolves.
  • Pour the pickling liquid over the cucumbers and shallot, ensuring everything is submerged.
  • Toss gently to combine, then cover and refrigerate for at least 30 minutes.
  • Stir before serving. The flavor deepens as the cucumbers marinate longer.
