  • 2 cups romaine lettuce, chopped
  • 1 cup parsley, finely chopped
  • 1 cup mint leaves, torn
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 2 large pita breads, cut into triangles
  • 2 tablespoons olive oil
  • Salt, to taste
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon sumac
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toss pita triangles with olive oil and salt in a bowl. Spread them on a baking sheet and bake for 10-12 minutes until golden brown.
  3. In a large bowl, combine chopped romaine, parsley, mint, cherry tomatoes, cucumber, and bell pepper.
  4. In another bowl, whisk together olive oil, lemon juice, sumac, minced garlic, salt, and pepper.
  5. Pour the dressing over the salad mixture and toss gently to coat.
  6. Add crispy pita chips just before serving to maintain their crunch.
