  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, halved
  • 225 g bow tie pasta
  • 340 g cooked turkey beef sausage, sliced
  • 5 cloves garlic, minced
  • 1 tablespoon olive oil (for butternut squash)
  • 2 tablespoons olive oil (for Brussels sprouts)
  • 1 tablespoon olive oil (for pasta dish)
  • 2 tablespoons butter
  • Salt and pepper to taste (for butternut squash)

  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Toss butternut squash with olive oil, salt, and pepper; roast on parchment-lined baking sheet for 15-20 minutes until tender.
  3. Toss Brussels sprouts with olive oil, salt, and pepper; roast on another baking sheet for 20-30 minutes until crispy.
  4. Cook bow tie pasta in salted water according to package instructions; drain and reserve some pasta water.
  5. In a skillet, heat olive oil over medium heat; sauté sliced beef sausage until browned and set aside.
  6. In the same skillet, cook minced garlic until fragrant, then add butter to melt.
  7. Combine cooked pasta with garlic butter sauce; mix in roasted vegetables and beef sausage; adjust seasoning as needed.
