  • 1/2 cup unsalted butter (softened)
  • 1/4 cup honey
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped walnuts
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1/4 cup cream cheese (softened)
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat together softened butter and granulated sugar until light and fluffy. Mix in honey until well combined.
  3. In another bowl, whisk together flour, ground cinnamon, ground cardamom, and salt. Gradually add dry ingredients to the butter mixture until just combined. Fold in chopped pistachios and walnuts gently.
  4. Roll dough into small balls and slightly flatten them on the prepared baking sheet.
  5. Bake for 10–12 minutes or until edges are golden brown. Allow cookies to cool completely on a wire rack.
  6. While cooling, beat cream cheese and powdered sugar together until smooth.
  7. Once cooled, spread cream cheese filling on one cookie's flat side and top with another cookie to create a sandwich.
