  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard ovens. Grease and line a loaf tin with baking paper.
  2. In a large bowl, mash the overripe bananas until smooth. Stir in the canola oil, milk, sugars, eggs, and vanilla extract until well combined.
  3. Sift the flour, baking powder, and salt into the banana mixture and gently mix until just combined; it’s okay if there are lumps.
  4. Pour the batter into the prepared loaf tin and bake for 45-55 minutes or until golden brown. A skewer inserted should come out clean.
  5. Allow cooling in the tin for about 10 minutes before transferring to a wire rack.
