- 2 medium ripe bananas
- 1/2 cup natural creamy peanut butter
- 1/2 cup pure maple syrup
- 3 Tbsp coconut oil (or avocado oil)
- 2 cups old-fashioned rolled oats
- 1/2 cup chocolate chips (or cacao nibs/dried fruit)
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a mixing bowl, mash the ripe bananas until smooth.
- Combine the mashed bananas with peanut butter, maple syrup, melted coconut oil, and vanilla extract. Mix well.
- Stir in rolled oats, protein powder, chocolate chips (or alternatives), walnuts (if using), and salt until evenly combined.
- Pour the mixture into the prepared baking dish and bake for 28 to 32 minutes or until set.
- Allow to cool before lifting out of the pan and slicing into bars.
