  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup mashed ripe banana (about 2 and 1/2 medium bananas)
  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned oats (blended into powder)
  • 1 teaspoon baking soda
  • 1 & 1/2 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1/2 cup sour cream
  • Optional: spices (cinnamon, nutmeg, cloves) and nuts (toasted pecans or walnuts)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan.
  2. Toast any nuts on a baking sheet for about 5–7 minutes until fragrant.
  3. Cream together softened butter, brown sugar, and granulated sugar until fluffy.
  4. Add eggs and vanilla extract; beat well.
  5. Mash ripe bananas and stir into the mixture until combined.
  6. Blend oats into powder and add along with flour into the bowl without stirring yet.
  7. Mix baking soda, baking powder, and salt into the flour mixture.
  8. Optionally incorporate spices before gently combining wet and dry ingredients.
  9. Fold in sour cream and toasted nuts before pouring batter into the pan.
  10. Bake for approximately 55–65 minutes until a toothpick comes out clean.
  11. Cool on a rack before slicing.
