  • 1/3 cup pineapple juice

  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper, diced
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. Heat oil in a large frying pan over medium heat.
  2. Cook chicken pieces for 6 to 8 minutes until golden brown; remove from pan.
  3. Sauté garlic in the same pan for about 30 seconds until fragrant.
  4. Add soy sauce, pineapple juice, honey (or brown sugar), and vinegar; simmer for 2 minutes.
  5. Whisk cornstarch with water; stir into the sauce and simmer until thickened.
  6. Return chicken to the pan with pineapple chunks and red bell pepper; cook for an additional 3 to 4 minutes.
  7. Stir in cooked rice until heated through.
