  • 2 cups graham cracker crumbs
  • 6 tablespoons salted butter (melted)
  • 2 packages cream cheese (room temperature)
  • 1/2 cup sour cream (room temperature)
  • 1/4 cup lemon juice (fresh)
  • 2 large eggs (room temperature)
  • 1 tablespoon lemon zest
  • 1/2 cup granulated white sugar
  • 1/4 teaspoon salt
  • 1/4 cup water

Instructions

  1. Preheat the oven to 350°F. Prepare room-temperature ingredients: cream cheese, sour cream, and eggs.
  2. In a saucepan, combine blackberries, sugar, and water; boil until thickened. Set aside to cool.
  3. For the crust, pulse graham cracker crumbs in a food processor; mix with sugar and melted butter. Press into an 8×8 inch pan and bake for about 9 minutes.
  4. Beat cream cheese with sugar, salt, and lemon zest until fluffy. Add sour cream, then incorporate eggs one by one. Mix in lemon juice until smooth.
  5. Pour filling over the crust; dollop blackberry puree on top and swirl gently.
  6. Bake at 325°F for approximately 55-60 minutes until set but slightly jiggly in the center.
  7. Cool for an hour before refrigerating for at least three hours before serving.
