  • 1 lb Mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 6-8 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning, divided
  • Salt and pepper

Instructions

  1. Pound chicken breasts to an even thickness, rub with olive oil, and season both sides with blackened seasoning.
  2. Heat a skillet over medium-high heat, add olive oil, and cook chicken for 3-4 minutes until blackened on one side. Flip, reduce heat to low, add butter and garlic, and cook until fully cooked (internal temperature reaches 165°F).
  3. Remove chicken from the skillet to rest before slicing.
  4. In the same skillet, melt remaining butter, add garlic, then stir in heavy cream and additional blackened seasoning; bring to a simmer for about 5 minutes.
  5. Cook pasta according to package instructions; reserve some pasta water before draining.
  6. Stir parmesan into the sauce until melted; combine with pasta using reserved water to adjust consistency.
  7. Serve pasta topped with sliced chicken and extra cajun seasoning if desired.
