  • 1 cup old-fashioned oats
  • ¾ cup all-purpose flour (or gluten-free flour blend)
  • ⅓ cup light brown sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon (optional)
  • 6 tbsp unsalted butter (or coconut oil), melted
  • 1 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • ¼ cup granulated sugar
  • 2 tsp cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
  2. In a large bowl, combine oats, flour, brown sugar, baking soda, salt, and cinnamon.
  3. Stir in the melted butter and vanilla until crumbly.
  4. Press half of the mixture into the bottom of the prepared pan.
  5. In another bowl, mix blueberries with granulated sugar and cornstarch; spread over the oat base.
  6. Crumble remaining oat mixture on top and gently press down.
  7. Bake for 35-40 minutes until golden brown and bubbly.
  8. Allow to cool completely before cutting into squares.
