  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion (chopped)
  • 3/4 cup chicken broth (low sodium recommended)
  • 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese (softened)
  • Salt & pepper to taste
  • Chopped parsley (optional)

Instructions

  1. Cut chicken breasts in half lengthwise and season with garlic powder, salt, and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat. Cook chicken for about 5-6 minutes on each side until cooked through; transfer to a plate.
  3. In the same skillet, sauté chopped onions for about 5 minutes until softened.
  4. Add chicken broth and softened Boursin cheese to the skillet; stir until smooth and let bubble for about 5 minutes.
  5. Return the cooked chicken to the skillet to warm through; adjust sauce thickness with additional broth if needed.
  6. Serve immediately after seasoning with extra salt and pepper as desired.
