  • 1 large egg yolk
  • 1 cup buttermilk (or milk + vinegar)
  • 1/2 cup unsalted butter
  • 2 teaspoons vanilla extract
  • 1 cup hot brewed coffee (or water)
  • 1 cup granulated sugar (for pudding)
  • 1/4 cup cornstarch (for pudding)
  • 1/4 teaspoon salt (for pudding)
  • 1 cup water (for pudding)
  • 1 cup heavy cream (for frosting)
  • 8 ounces semisweet or bittersweet chocolate (for frosting)
  • 4 ounces unsweetened chocolate (for frosting)
  • 4 cups confectioners sugar (for frosting)
  • 2 teaspoons vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
  2. In a mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream the unsalted butter with granulated sugar until light and fluffy. Add eggs one at a time.
  4. Mix in buttermilk and vanilla extract until combined.
  5. Gradually add the dry ingredients and alternate with hot coffee until smooth.
  6. Divide batter between prepared pans and bake for 30–35 minutes or until a toothpick inserted comes out clean.
  7. Prepare pudding filling by cooking sugar, cornstarch, salt, and water in a saucepan until thickened; then stir in chocolate and vanilla.
  8. Make frosting by melting unsweetened chocolate; mix with creamed butter and sifted confectioners sugar until smooth.
  9. Once cooled, layer the cakes with pudding filling in between and frost generously.
