  • 8 Russet potatoes, peeled and diced
  • 2 pounds boneless, skinless chicken breasts
  • ¼ cup buffalo sauce
  • 2 tablespoons extra virgin olive oil
  • 1 packet dry ranch seasoning mix
  • 1 cup shredded mild cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8-10 slices cooked turkey bacon, crumbled

Instructions

  1. Preheat the oven to 425°F and line a large sheet pan with parchment paper.
  2. In a mixing bowl, combine diced potatoes with olive oil, buffalo sauce, ranch seasoning mix, and black pepper until evenly coated. Spread the potatoes in a single layer on the prepared sheet pan.
  3. In another bowl, toss chicken pieces with remaining buffalo sauce. Scatter the marinated chicken over the potatoes on the sheet pan.
  4. Bake for about 40 minutes until potatoes are tender and chicken is cooked through.
  5. Remove from the oven and sprinkle shredded cheeses and crumbled turkey bacon on top. Return to the oven for an additional 10-15 minutes until cheese is melted.
