Cabbage Roll Soup is a heartwarming dish that brings comfort to any chilly day. This delicious one-pot meal combines savory ground beef, tender cabbage, and vibrant vegetables simmered in a rich broth, making it the perfect solution for busy weeknights or cozy gatherings.

  • 2 tsp vegetable oil
  • 1 lb lean ground beef
  • 1 medium yellow onion (diced)
  • 2 cloves garlic (minced)
  • 4 cups chopped green cabbage
  • 2 medium carrots (sliced)
  • 4 cups low-sodium beef broth
  • 3 cans (8 oz each) tomato sauce
  • 1/2 cup uncooked white rice
  • 1 bay leaf
  • 3 tbsp light brown sugar
  • 2 tbsp fresh parsley (chopped)

Instructions

  1. In a Dutch oven or large soup pot, heat the vegetable oil over medium-high heat. Add the ground beef, seasoning with salt and pepper to taste, and cook until browned.
  2. Stir in the diced onion and minced garlic, cooking for another 2–3 minutes until the onions are tender.
  3. Add the chopped cabbage, sliced carrots, tomato sauce, beef broth, uncooked rice, bay leaf, and brown sugar. Mix well.
  4. Bring the mixture to a simmer on medium-low heat and let it cook for approximately 25 minutes until the rice is tender.
  5. Remove the bay leaf before serving and sprinkle with fresh parsley for garnish.
