  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tsp Cajun seasoning (adjust to your spice preference)
  • 1 clove garlic, minced
  • Salt & freshly cracked black pepper to taste
  • 8 oz linguine pasta
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ¾ cup grated Parmesan cheese
  • ½ tsp dried thyme
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped
  • Extra Parmesan cheese

Instructions

  1. Cook linguine according to package instructions until al dente. Reserve ¼ cup pasta water, then drain.
  2. Season chicken breasts with Cajun seasoning, salt, and pepper. Heat olive oil in a skillet over medium-high heat; add minced garlic and sauté until fragrant.
  3. Cook seasoned chicken in the skillet for 5-7 minutes per side until golden brown and cooked through. Let rest before slicing.
  4. In the same skillet, melt butter and sauté garlic until fragrant. Pour in heavy cream, bringing it to a simmer. Stir in grated Parmesan cheese until melted.
  5. Add dried thyme and combine with cooked linguine, tossing gently to coat. Adjust consistency with reserved pasta water if needed.
  6. Plate the creamy linguine, top with sliced Cajun chicken, and garnish with fresh parsley and extra Parmesan.
