  • 2 large boneless skinless chicken breasts
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream (or half and half)
  • 1 tablespoon honey
  • 2 teaspoons Cajun seasoning
  • 3 cloves garlic (minced)
  • 10 oz. Rotel diced tomatoes with green chilies
  • Olive oil (or avocado oil)
  • 3 tablespoons flour

Instructions

  1. Pat chicken breasts dry and season both sides with Cajun seasoning. Dredge in flour until coated.
  2. Heat olive oil and butter in a skillet over medium heat. Cook chicken for about 5-7 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, sauté minced garlic until fragrant. Add chicken broth, hot sauce, honey, brown sugar, mustard powder, oregano, cayenne pepper, red pepper flakes, and remaining Cajun seasoning. Simmer for 5 minutes before adding heavy cream.
  4. Stir in diced tomatoes (with reserved juice) and return cooked chicken to the skillet. Top with shredded cheddar jack cheese and let melt.
  5. Serve drizzled with lime juice and garnished with chopped cilantro.
