  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 tablespoon brown sugar
  • 3 cups chicken broth
  • 1 tablespoon rice vinegar
  • 1 cup jasmine rice
  • 2 cups water (for rice)
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cut the chicken thighs into bite-sized pieces and season lightly with salt and pepper.
  2. In a mixing bowl, combine soy sauce, sesame oil, garlic, ginger, and brown sugar. Add the chicken pieces to marinate for at least 10 minutes.
  3. Rinse jasmine rice under cold water until clear. In a saucepan, bring 2 cups of water to a boil, add the rinsed rice, reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Fluff with a fork.
  4. Heat oil in a large pot over medium-high heat. Sauté the marinated chicken until caramelised and fully cooked (about 5-7 minutes).
  5. Pour in the chicken broth and rice vinegar; bring to a boil then reduce heat to simmer.
  6. Mix cornstarch with water and slowly add it to the broth while stirring to thicken; simmer for an additional 5 minutes.
  7. Taste and adjust seasoning as needed before serving over jasmine rice.
