  • 3 large garlic cloves
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon Aleppo pepper
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup slivered almonds
  • 1 bunch celery (10 to 12 stalks), thinly sliced with leaves reserved
  • 3 scallions, sliced (white and green parts)
  • 1/3 cup chopped fresh mint leaves

Instructions

  1. Make the Dressing: Mince garlic and create a paste. In a bowl, mix garlic paste with yogurt, lemon juice, olive oil, Aleppo pepper, salt, and black pepper; whisk until well combined.
  2. Toast the Nuts: Heat a small skillet over medium heat. Add slivered almonds and toast for about 2 to 4 minutes until golden brown. Set aside to cool.
  3. Assemble the Salad: In the bowl with the dressing, add celery slices, scallions, mint, and most of the toasted almonds (reserve some for garnish). Gently stir until coated. Garnish with remaining almonds and mint before serving.
