  • 2 cups low-sodium chicken broth
  • 2 (10.5 oz) cans cream of mushroom soup
  • Kosher salt
  • Freshly ground black pepper
  • 4 large bone-in, skin-on chicken thighs
  • 2 tablespoons melted butter
  • Fresh thyme
  • 1 clove garlic

Instructions

  1. 1. Preheat the oven to 350°F (175°C) and grease a 9″x13″ baking dish with olive oil.
  2. 2. In a large bowl, mix rinsed rice, chopped onion, chicken broth, cream of mushroom soup, salt, and pepper until well combined.
