  • 1 pound short pasta (penne, fusilli, or cavatappi)
  • 1 pound shredded cooked chicken (rotisserie chicken works great)
  • 1 to 2 large romaine hearts (chopped or torn)
  • 1 cup Caesar salad dressing (store-bought or homemade)
  • 1 tablespoon extra-virgin olive oil
  • 1 clove garlic (minced)
  • 1/2 cup panko breadcrumbs
  • Salt and pepper to taste
  • Shaved Parmesan cheese for serving

Instructions

  1. Boil salted water in a large pot.
  2. In a small skillet, heat olive oil over medium-low heat. Add minced garlic and sauté until fragrant.
  3. Stir in panko breadcrumbs and toast until golden brown; set aside.
  4. Cook pasta in boiling water until al dente (8–10 minutes). Drain and cool under running water.
  5. In a large serving bowl, combine cooled pasta, shredded chicken, romaine lettuce, and Caesar dressing. Toss until well mixed.
  6. Season with salt and pepper. Add half of the toasted breadcrumbs and toss again. Garnish with remaining breadcrumbs and shaved Parmesan.
