  • 300 grams dried egg noodles
  • 250 grams boneless chicken breast
  • 1 onion, thinly sliced
  • 2-3 cloves garlic, finely chopped
  • 2-3 spring onions, cut into 2-inch pieces
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2-3 cabbage leaves, thinly sliced
  • Cooking oil
  • Light soy sauce
  • Dark soy sauce
  • Mushroom sauce (oyster sauce substitute)
  • Sesame oil
  • Brown sugar
  • Water
  • White pepper

Instructions

  1. Marinate the chicken by mixing it with light soy sauce, cornstarch, baking soda, white pepper, sesame oil, and brown sugar. Set aside.
  2. Cook the egg noodles according to package instructions; drain and rinse with cold water.
  3. In a bowl or jar, combine all the chow mein sauce ingredients.
  4. Heat a wok over medium-high heat with some cooking oil. Stir-fry the marinated chicken until fully cooked; remove and set aside.
  5. Sauté onions and garlic until fragrant; add carrots and bell peppers to stir-fry briefly.
  6. Combine cooked noodles and chow mein sauce in the wok with the chicken; mix well.
  7. Top with spring onions before serving hot.
