  • 4 boneless, skinless chicken breasts
  • 4 slices of chicken
  • 4 slices of Swiss cheese
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko or regular)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 cup milk
  • 1 tsp Dijon mustard
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Flatten each chicken breast to about ¼ inch thick using a meat mallet. Layer each breast with one slice of chicken and one slice of Swiss cheese, then roll tightly and secure with toothpicks.
  3. Dredge each roll in flour seasoned with salt and pepper, dip in beaten eggs, then coat thoroughly with breadcrumbs.
  4. In a skillet over medium heat, melt olive oil and butter. Sear the rolls for approximately 2–3 minutes on each side until golden brown.
  5. Transfer the rolls to a baking dish and bake uncovered for 20–25 minutes or until they reach an internal temperature of 165°F (74°C).
  6. For the sauce, melt butter in a saucepan over medium heat, add flour, cook briefly, then gradually whisk in milk. Stir in Dijon mustard and Parmesan cheese until thickened.
  7. Serve the cooked rolls drizzled with the creamy sauce.
