  • 4 cups shredded cooked chicken
  • 2 cups instant rice
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen diced onion and bell pepper blend
  • 1 can (10 ounces) diced tomatoes with chilies
  • 1.5 cups chicken broth
  • 1 packet fajita seasoning
  • 1 package (8 ounces) shredded Mexican blend cheese

Instructions

  1. Preheat your oven to 350°F and lightly spray a 9×13 inch baking dish.
  2. In a large bowl, combine shredded chicken, uncooked rice, cream of chicken soup, sour cream, frozen veggies, diced tomatoes with their juice, chicken broth, fajita seasoning, and half the cheese.
  3. Pour the mixture into the baking dish and cover tightly with aluminum foil. Bake for 35 to 45 minutes until the rice is tender.
  4. Remove from the oven and top with the remaining cheese. Return uncovered to bake until melted and bubbly.
