  • 1 cup dry white apple vinegar
  • 4 cloves garlic (minced)
  • ¼ cup heavy cream
  • 1/3 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • Salt
  • Pepper
  • ¼ cup flour
  • 1 cup chicken broth
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 2 tablespoons fresh lemon juice
  • Fresh Parsley (to garnish)
  • 1 teaspoon dried parsley
  • 1 teaspoon mustard powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil

Instructions

  1. Slice chicken breasts lengthwise into thinner slices, pound to about ½ inch thick, and season with Italian seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 4-5 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add white apple vinegar and scrape any browned bits from the pan; let reduce by half.
  4. Add butter and minced garlic, cooking for one minute before stirring in chicken broth and seasonings.
  5. If desired, thicken sauce with cornstarch mixed with cold water.
  6. Stir in heavy cream and Parmesan cheese until melted.
  7. Return the chicken to the skillet, spoon sauce over top, cover partially, and simmer for about 5 minutes before serving.
