  • 3/4 cup (150 g) dark brown sugar, packed
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla
  • 1 tablespoon molasses
  • 2 cups (250 g) all-purpose flour, spooned and leveled
  • 1/2 cup (45 g) unsweetened cocoa powder, sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup (66 g) granulated sugar, for rolling dough
  • 1 cup dark or semi-sweet chocolate chips
  • 1 teaspoon coconut or vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, dark brown sugar, granulated sugar, egg, vanilla, and molasses until smooth.
  3. In another bowl, combine all-purpose flour, cocoa powder, baking soda, and salt. Gradually mix into the wet ingredients until combined.
  4. Fold in chocolate chips and coconut or vegetable oil.
  5. Form dough into balls using a cookie scoop or spoon.
  6. Roll each ball in granulated sugar and place on a parchment-lined baking sheet.
  7. Bake for approximately 10 minutes until edges are set but centers remain soft.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.
