Ingredients

Scale
  • 1/2 cup unsalted butter (melted)
  • 1 large egg
  • 1 cup light brown sugar (packed)
  • 1 tablespoon vanilla extract
  • 2 to 3 teaspoons cinnamon (adjust to taste)
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt (or to taste)
  • 6 ounces cream cheese (softened)
  • 1/4 cup unsalted butter (softened, for frosting)
  • 1 1/2 cups confectioners’ sugar
  • 1/2 teaspoon vanilla extract (for frosting)
  • 1/2 teaspoon salt (for frosting)
  • Cinnamon (for garnishing)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with aluminum foil and spray lightly with cooking spray.
  2. In a large microwave-safe bowl, melt the butter. Allow it to cool slightly before adding the egg, brown sugar, vanilla extract, and cinnamon. Whisk until smooth.
  3. Stir in flour and salt until just combined; avoid overmixing.
  4. Pour batter into the prepared pan and smooth it out. Bake for about 20-24 minutes or until set in the center.
  5. Cool on a wire rack for at least 90 minutes before frosting.
  6. For frosting, beat cream cheese, softened butter, confectioners’ sugar, vanilla extract, and salt until fluffy.
  7. Spread frosting over cooled bars and sprinkle with cinnamon if desired.
