  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 4 oz turkey strips, chopped
  • 1 can cannellini beans
  • 1 28 oz can whole plum tomatoes
  • 4 cups chicken broth
  • 3/4 cups ditalini pasta
  • Fresh basil
  • 1 bag spinach, chopped
  • 2 tbsp olive oil
  • 2 bay leaves
  • 1 tbsp oregano
  • 2 tbsp tomato paste

Instructions

  1. In a large pot, sauté chopped turkey in olive oil over medium heat until crispy (about 8 minutes).
  2. Add diced carrots, celery, and onion; cook until softened (about 10 minutes). Season with half the salt, pepper, and oregano.
  3. Stir in tomato paste in the center of the pot; caramelize for about 3 minutes before mixing with vegetables.
  4. Add crushed tomatoes, remaining seasonings, and bay leaves; bring to a simmer.
  5. Pour in chicken broth and add parmesan rind; boil then reduce heat to simmer for 15 minutes.
  6. Mix in cannellini beans and ditalini pasta; simmer for another 15 minutes until pasta is tender.
  7. Finish by stirring in chopped spinach; cover for about 3 minutes before serving.
