Classic Strawberry Ricotta Muffins are the perfect blend of moist, fluffy texture and sweet, vibrant strawberry flavor. Ideal for lazy weekend mornings or quick snacks throughout the week, these muffins are not just delicious but also easy to prepare.

  • 2.75 cups self-raising flour
  • 1.25 tsp ground cinnamon
  • 0.75 cup sugar
  • 0.5 tsp salt
  • 2 eggs (room temperature)
  • 3 tbsp butter (melted)
  • 1 tsp vanilla extract
  • 1 cup milk
  • 8.5 oz ricotta cheese
  • 8.8 oz fresh strawberries (hulled and diced)
  • Demerara sugar (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine self-raising flour, ground cinnamon, sugar, and salt; whisk well.
  3. In another bowl, beat the eggs until frothy. Add melted butter, vanilla extract, and milk; mix until smooth.
  4. Gently fold in ricotta cheese until no lumps remain.
  5. Pour wet ingredients into dry ingredients; stir until just combined (a few lumps are okay).
  6. Fold in diced strawberries evenly.
  7. Spoon batter into muffin tin lined with parchment liners or greased lightly, filling each cup about three-quarters full.
  8. Sprinkle demerara sugar on top for added crunch and bake for about 20 minutes or until golden brown and a toothpick comes out clean.
  9. Allow to cool for five minutes before transferring to a cooling rack.
