  • 300 g pasta
  • 1 tablespoon olive oil
  • 30 g unsalted butter
  • 450 g chicken breast fillets (cut into bite-sized pieces)
  • 1 medium shallot (diced)
  • 2 large garlic cloves (minced)
  • 1 tablespoon tomato paste
  • 250 ml chicken stock
  • 150 g light cream cheese
  • 2 tablespoons buffalo wing sauce
  • 2 tablespoons ranch sauce
  • 100 g grated cheddar cheese
  • 100 g grated Monterey Jack cheese

Instructions

  1. Cook the pasta in boiling water for one minute less than package instructions. Reserve one cup of pasta water before draining.
  2. In a large pan or Dutch oven, heat olive oil and butter over medium heat. Add chicken pieces and cook for 6–7 minutes until fully cooked.
  3. Stir in shallot and garlic; sauté for another 1–2 minutes. Add tomato paste and chicken stock; bring to a simmer.
  4. Lower the heat and mix in cream cheese until melted completely, letting it bubble gently for about 1–2 minutes.
  5. Stir in buffalo wing sauce and ranch dressing, then mix in drained pasta. If too thick, add reserved pasta water until desired consistency is reached.
  6. Fold in both cheeses until melted; season with salt and pepper before serving.
