  • 8 oz rigatoni pasta
  • 1 cup heavy cream
  • ½ cup low-sodium chicken broth
  • ⅔ cup cubed Velveeta cheese
  • ⅔ cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tsp olive oil
  • 1 tsp Cajun seasoning
  • ⅓ tsp smoked paprika
  • Salt and black pepper, to taste
  • 3 cloves garlic, minced
  • 2 tbsp + 2 tsp unsalted butter, divided
  • ⅓ tsp Italian seasoning
  • Chopped parsley or dried herbs, for garnish

Instructions

  1. Cook rigatoni in salted water until al dente; drain and set aside.
  2. Season chicken strips with Cajun seasoning and smoked paprika. In a skillet, heat olive oil and butter; cook chicken until golden and cooked through (5-7 minutes).
  3. Remove chicken; in the same skillet, sauté garlic before adding chicken broth and heavy cream. Bring to a gentle simmer.
  4. Stir in cream cheese, Velveeta, mozzarella, and Parmesan until melted and smooth.
  5. Toss rigatoni into the sauce, then return chicken to the skillet. Heat for an additional 1–2 minutes.
