  • 1 1/2 tsp Cajun seasoning

  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 12 oz rotini pasta
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup cream cheese
  • 1 cup freshly grated Parmesan cheese
  • 3/4 cup shredded mozzarella cheese
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • Chopped parsley
  • Extra Parmesan

Instructions

  1. Cook rotini pasta in salted boiling water until tender; drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Add chicken seasoned with Cajun spices and cook until golden brown; set aside.
  3. In the same skillet, melt remaining butter, stir in minced garlic, then add chicken broth and heavy cream. Mix in cream cheese until smooth.
  4. Stir in Parmesan, mozzarella, Italian seasoning, and red pepper flakes (if desired). Add cooked rotini to the sauce, tossing to coat evenly.
  5. Return chicken to the skillet; combine gently. Serve hot garnished with parsley and extra Parmesan if desired.
