Ingredients

  • 2 chicken breasts, cut into 1” pieces
  • ½ tsp garlic powder
  • Salt & pepper, to taste
  • 3 tbsp olive oil
  • 1 tbsp butter
  • 8 oz cremini mushrooms, sliced
  • ½ medium onion, chopped
  • 1 tbsp Dijon mustard
  • ⅔ cup chicken broth
  • 3 cloves garlic, minced
  • ½ cup full-fat sour cream

Instructions

  1. Season chicken with garlic powder, salt, pepper, and coat in flour.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat and sear the chicken until browned on all sides. Set aside.
  3. In the same skillet, add butter and remaining olive oil; sauté mushrooms and onions until soft.
  4. Stir in Dijon mustard and minced garlic; cook for about a minute.
  5. Pour in chicken broth while scraping up any bits from the pan. Return the chicken to the skillet and cook for another 2 minutes.
  6. Lower heat and stir in sour cream until warmed through (do not boil). Adjust seasoning as needed.
