  • 1 ½ pounds boneless skinless chicken thighs
  • 2 tablespoons extra virgin olive oil
  • 1 can (7 ounces) chipotle peppers in adobo sauce (use only the sauce)
  • 2 cans (15.25 ounces each) sweet corn (drained) or 1 bag (16 ounces) frozen sweet corn
  • 1 can (15 ounces) pinto beans (drained and rinsed)
  • 1 can (14.5 ounces) fire-roasted tomatoes (drained)
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1 cup instant rice
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Pat chicken thighs dry, season with salt and pepper.
  2. Heat 1 tablespoon olive oil in a Dutch oven over medium-high heat. Sear chicken until golden brown on both sides, then set aside.
  3. In the same pot, reduce heat to medium and add remaining olive oil along with chipotle sauce, coriander, cumin, and garlic; stir until fragrant.
  4. Add corn, beans, tomatoes, broth, and the seared chicken back into the pot. Bring to a gentle boil, cover, and simmer for about 25 minutes until chicken is tender.
  5. Shred the chicken using forks and stir back into the soup.
  6. Add instant rice and simmer uncovered for another 10 minutes until rice is cooked.
  7. Stir in heavy cream slowly over low heat until smooth; season with salt and pepper to taste.
