  • 12 oz rotini pasta
  • lbs boneless skinless chicken breasts, cut into bite-size pieces
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1½ cups broccoli florets
  • ¾ cup freshly grated Parmesan cheese
  • ½ cup shredded mozzarella cheese

Instructions

  1. Cook the rotini pasta according to package instructions in salted boiling water. In the last two minutes of cooking, add the broccoli florets. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces seasoned with garlic powder, paprika, salt, and pepper. Cook until golden brown and cooked through (about 5–7 minutes). Remove from skillet.
  3. In the same skillet, reduce heat to medium and melt butter. Stir in minced garlic and cook until fragrant (about 30 seconds). Add chicken broth and heavy cream; let simmer for 2–3 minutes until slightly thickened.
  4. Stir in Parmesan cheese, mozzarella cheese, and Italian seasoning until smooth. Return cooked chicken, rotini pasta, and broccoli to the skillet; toss until well coated in sauce.
  5. Serve hot.
