  • 1 pound boneless skinless chicken breasts (or thighs)
  • 2 cups chicken broth
  • 1 cup heavy cream (or half & half)
  • 3 cloves garlic
  • 1 small onion
  • ½ cup Parmesan cheese
  • 1 cup basmati rice
  • Fresh parsley
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons butter
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried oregano

Instructions

  1. In a skillet over medium heat, heat olive oil. Season chicken with garlic powder, onion powder, Italian seasoning, paprika, salt, and black pepper. Sear until golden brown on both sides; remove from skillet.
  2. In the same skillet, melt butter and sauté minced garlic and diced onion until fragrant. Stir in heavy cream and chicken broth. Add thyme, rosemary, oregano, and Parmesan cheese; mix well.
  3. Return chicken to skillet with the sauce and simmer for about 10-15 minutes until cooked through.
  4. In a separate pot, combine rinsed basmati rice with chicken broth, salt, and black pepper; bring to a boil then cover and reduce heat to low for about 15 minutes.
  5. Fluff rice with a fork and serve creamy herb chicken over it, garnished with parsley.
