  • 1 tablespoon olive oil
  • 12 oz Italian beef sausage links (substituted with chicken or turkey sausage)
  • 10 oz potato gnocchi
  • 1 cup heavy cream
  • 1/3 cup chicken broth
  • 1 cup pumpkin puree
  • 3 cloves garlic (minced)
  • 4 oz fresh spinach
  • 2 tablespoons fresh sage (chopped)
  • 2 tablespoons fresh thyme
  • Salt and coarsely ground black pepper (to taste)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Remove beef sausage from casings, slicing into bite-sized pieces.
  2. Cook beef sausage for about 6 minutes until browned, then drain excess fat.
  3. Add potato gnocchi, heavy cream, and chicken broth to the skillet; bring to a boil while stirring.
  4. Cover and cook for 5 minutes until gnocchi softens.
  5. Stir in pumpkin puree, garlic, and spinach; cook until spinach wilts (about 3 minutes).
  6. Season with sage, thyme, salt, and pepper before serving.
